Max Coen's New Japanese Bistro, Eel Sushi, Set to Open in Notting Hill

Max Coen, the acclaimed chef behind Michelin-starred Dorian, is set to open a new restaurant in London. Named Eel Sushi, this upcoming Japanese bistro promises an authentic omakase experience at a reasonable price, differentiating itself from typical London sushi spots.

Located near Dorian in Notting Hill, Eel Sushi will serve as a "tiny sibling" to Coen's first restaurant. However, it will offer a unique twist, focusing on hot Japanese dishes with a small amount of raw ingredients, going against the grain and delivering a Tokyo-inspired experience.

Coen, known for his passion for cooking and dedication to culinary craftsmanship, has partnered with Japanese chef Robin Kosuge for a notable luxury ramen release, further deepening his engagement with Japanese cuisine. This new venture reflects Coen's evolution from fine dining to innovative, neighbourhood concepts that emphasize high-quality sourcing.

Dorian, Coen's celebrated neighbourhood bistro, has retained its status as one of the best restaurants in London since receiving its Michelin star in 2022. The restaurant is beloved by celebrities and locals alike, known for its approachable and skillful dishes like crab rosti and beef tartare. It emphasizes and uses locally sourced produce, creating a cozy atmosphere that aligns with Coen's vision of creating a restaurant led by talented individuals without compromising on warmth and coziness.

Yuji Shimokawa, a former chef at Dorian, will lead Eel Sushi. The menu at Eel Sushi is based on the keywords: delicious, thoughtful, and meaningful. Coen works with local producers to ensure the best version of an ingredient is used, a practice he has carried over from Dorian.
